Today Mizunara barrels represent barely 10% of the stocks
whiskey aged in Japan. Its intrinsic qualities and the aromas they transmit
are recognized by Japanese whiskey lovers for its unique character.
The Matsui – Mizunara Cask, is a single malt distilled by the Kurayoshi distillery, located in Tottori prefecture. This whiskey is aged
in Mizunara oak barrels. Mizunara wood is
as famous for its rarity as for its complexity to be worked.
This oak takes 200 to 300 years to reach maturity, it brings
exceptional aromatic qualities.
This variety of oak is only found in forests
of Hokkaido and in the Tohoku region, north of Honshu.
The Mizunara brings a honeyed woodiness which coats the whiskey and brings
an elegant length specific to this aging. This whiskey is
reduced with fresh water from snowfall from the massif
mountainous Daisen.
Aging takes place in Tottori Prefecture, where nature is
dominant and where temperatures experience significant
variations over the seasons (The angels' share corresponds to 3% of evaporation from the barrel).
