Description
FUYU means “WINTER” in Japanese.
This artisanal Shochu is a single grain produced 100% from barley on the island of Honshu.
The main difference with a single malt whiskey lies in the absence of barley malting.
Indeed, for Sochu, the Japanese use a microscopic fungus, Koji, to inoculate the priming must and thus transform the complex sugars into simple sugars, which makes it possible to do without malting.
Then a double distillation takes place to obtain an alcohol between 65° and 66°.
The distillate is filtered before being aged for a minimum of 3 years in new American white oak barrels with a capacity of 450L to 470L.
Finally, the spirit is reduced to 43° and filtered a second time before bottling.
