White soy sauce comes from Aichi, one of the most wheat-producing regions of Japan also known in the archipelago for its tasty water. Unlike classic soy sauces, it is produced with 90% wheat and 10% soy. It is this significant use of wheat that gives the sauce a light, almost transparent color, as well as a mild taste.

Flavor: White soy sauce has a mild, long taste, round in the mouth and rich in umami .
